Enchilada Casserole


1 -3lb. pkg hamburger

1 onion

1 pkg taco seasoning

1 can Old El Paso enchilada sauce

1 can brown beef gravy

12 corn tortillas

1 large bag shredded cheese

1 can black olives


In large pan, brown all hamburger with onion. Once browned, drain with hot water. Add taco seasoning mix and let simmer.

In mixing bowl, combine enchilada sauce and brown gravy and mix well.

In baking dish, layer on the bottom 6 tortillas. Spoon some of the sauce over the tortillas to lightly cover. Sprinkle think layer of cheese. Spread a layer of taco meat. Put another layer of tortillas, sauce, cheese, then meat. You should have 2 layers. Cover with rest of cheese. Cut black olives in half and place on top of cheese. Bake at 400 degrees until all cheese is melted.
